Lemon drizzle cake



200g unsalted butter, melted
200g castor sugar
200g self raising flour
4 eggs
2 lemon zest

To prepare the lemon juice topping
Squeeze 2 lemon juice and mix with 5 tbsp of sugar and stir well

Preheat the oven with gas mark 3
Add in melted butter and sugar into a mixing bowl and beat with a whisk or electric mixer until fluffy
Add in egg and continue beating, one at a time
Add in grated lemon
Sieve in self raising flour and fold gently until well
Bake in an oven for 30 mins
Always insert toothpick to check if it is fully cook

And finally, drizzle the lemon juice topping all over
